National Picnic Month: Our Favourite Recipes
To celebrate National Picnic Month, we wanted to share some of our favourite recipes for the perfect day out in the sun. After a tough winter in a lockdown, the classic British picnic has earned a whole new level of appreciation in my eyes and deserves to be celebrated accordingly. Therefore, we challenge you to trade in the shop-bought sausage rolls for good quality, homemade food- make it as special as this summer is fated to be!
Mini Quiches
Tuck into crispy, bite-size cases filled with parmesan, pancetta and cherry tomatoes – perfect for a picnic in the sun. Taking approximately 90 minutes to make and bake, these little tartlets may be small in size, but they’re very big in taste.
Petite Pesto Pasta Salad
Including chunks of fresh cucumber, succulent cherry tomatoes, mini pasta shells (conchigliette), creamy crème fresh and pesto, this veggie side dish is a tasty and light addition to any picnic. And might I also mention…it only takes 10 minutes to prepare!
A Trio of Dips
Why have one sauce to dip your veggie sticks in, when you can have three? If you really want to add some dimension to your picnic, we suggest whipping up a Roasted Red Pepper Hummus, creamy Tzatziki and some chunky Guacamole – you can thank us later.
Pitta Bread Pockets
A welcomed alternative to the classic sandwich, pitta bread pockets are easy to prepare, adaptable and easy to transport. From tuna mayonnaise to egg and cress, stuff it with your filling of choice, wrap it in some tinfoil and you’re good to go.
Herb and Feta Parcels
Everyone received their fair share of parcels during lockdown (hello Amazon), but these cheesy pastry pockets know how to deliver the goods- and by goods, we mean flavour. Stuffed with a delicious blend of herbs, watercress and feta, these crispy creations take just 25 minutes to prepare and cook and can be served hot or cold.
Antipasto Bites
If you’re unfamiliar with antipasto, it’s a traditional Italian appetiser consisting of cold meats, mozzarella, olives, vegetables and many more delicious treats (see our blog). But instead of serving it on plates, grab yourself some toothpicks and layer on your ingredients. That way, your picnic-friendly bites will be easier to eat and transport.
Three-way Focaccia
Contrary to popular belief, focaccia is relatively straightforward to make and doesn’t take hours on end. Known for its moist texture, this bread is a wonderful addition to any picnic and is the perfect canvas for extra toppings and flavours – in this case, three!
Blackcurrant Lemonade
No picnic is complete without something refreshing to drink, and we happen to have found the tastiest beverage on earth – 10-minute Tangy Blackcurrant Lemonade. And the best part is, you can add Prosecco if it’s a special occasion! But if you’re not much of a fruit lover, this homemade Ginger Beer is an equally- refreshing alternative.
